Baked Oatmeal with Figs & Hazelnuts

The exciting thing about this recipe is that it's easy... which is exactly what I need many of my recipes to be. I love to cook, but finding the time can be ridiculously insane when my primary job is (kid) taxi driver. Which is the exact reason I love to make things in batches, then I'm set with breakfast or whichever meal for a few days.

Oats are never too flashy, but the addition of dried figs and hazelnuts makes it just a little special. If you don't have either of those on hand, you could of course use whatever dried fruit and nuts you have. I happen to love figs, and hazelnuts pair really well with them! Plus, it's one final nod to late summer flavors :)


I like this baked oatmeal because of its chewy texture- no mushy oats out of a vat for me! And, it has cholesterol lowering potential which is super important to me as I combat my familial high cholesterol genes with diet and exercise.

You could serve this cake-like on a plate, or do what I do, and scoop it into a bowl, warm it, and spoon a little non-dairy yogurt or milk over it. Either way, it's comforting, filling, and easy!


Baked Oatmeal with Figs & Hazelnuts

serves 6

Ingredients

  • 1 cup steel cut oats

  • 1/4 cup oat bran

  • 2 1/2 cups unsweetened almond milk

  • 1/4 cup maple syrup

  • 1/2 medium apple, chopped

  • 1/4 cup dried figs (about 4), chopped

  • 1/4 cup chopped hazelnuts

  • 1 tsp cinnamon

  • 1/4 tsp ginger

  • 1/4 tsp salt

Instructions

  1. Preheat oven to 375 degrees. Mix all ingredients in an 8x8 baking dish. Bake 45 minutes. Serve warm with a bit of yogurt and fresh figs if desired.
