Grown-up London Fog

Victoria BC is on a wonderful little island not too far from where I live in Washington State. A drive up the Olympic Peninsula and then a scenic ferry ride across the Puget Sound lands you on this beautiful historic Canadian island. This island is where I learned about London Fog.
Not the fog that settles in on a cold rainy day but the fog of steamed milk poured into a cup of Earl Grey tea.
Absolute deliciousness.
Earl Grey tea is a black tea flavored with bergamot. Berga who??? I know. I hopped over to google and found that bergamot is a Mediterranean citrus fruit a.k.a. Citrus bergamia.

The flesh of these orange sized citrus fruits is not typically eaten but is used, along with the zest, to flavor custards, cookies, cocktails, marmalade, pesto, and....Earl Grey tea. The oil extracted from the zest (rind) of the fruit is what you find flavoring the tea.
This oil is also prized for its use in perfumes, colognes, and soaps. One sip of Earl Grey tea and you'll recognize the fragrant, slightly spicy, and aromatic bergamot.
Aside from these uses, bergamot has been found to stimulate digestion, help with weight loss, lower blood sugar, and reduce stress and anxiety. My quick Google search gave me all sorts of new reasons to enjoy this Grown-up London Fog.
As for the grown-up part....the bourbon is entirely optional.
You can even use caffeinated Earl Grey tea and have your London Fog during the day when stress and anxiety are nipping at your heels or your stomach needs a little help digesting lunch.

Grown-Up London Fog
Serves 2
Ingredients
2 cups nondairy milk
2 cups water
2 decaf earl grey tea bags
2 shots brown sugar bourbon (or plain if BSB isn't available0
Optional: honey or maple syrup
Instructions
Bring the water to a boil and add the tea bags. Cover and let steep for 10 minutes.
While the tea steeps, warm up the milk.
Divide the bourbon, tea, and warm milk between two glasses. Add honey or maple syrup to taste.
