Winter Citrus Salad

Citrus makes me think of warm places, warm weather, palm trees and vacation. I think, well...I know, God knew what He was doing when He created the many varieties of colorful citrus fruit. He knew that we, in the cold regions of the world, would need something tropical to bring color to our drab, dark winter days. He knew we'd need the health benefits all of those colorful citrus fruits bring us (not just vitamin C folks).

I love how much thought God puts into everything He does. He daily, often moment-by-moment, makes me stand in awe at the wonder of His creation and His great love for us.
These citrus fruits God created - well, I could eat this Winter Citrus Salad every single day for weeks on end.
It's just that good.
Try it and you'll be saying the same thing. I promise!
This salad could be a side dish or a meal. It's got everything a plant based meal needs. Protein, carbs, fat, fiber (the basics) and spice, crunch, creaminess, and (drum roll please) F.L.A.V.O.R!!! to the nth degree.
The dressing makes enough for leftovers and keeps in the fridge for a week or more. But it's so tasty it'll likely find it's way onto any vegetable you've got on the end of your fork. I know it's found it's way onto many a vegetable dish in my house and might be finding it's way into another blog recipe.
If you don't make this Winter Citrus Salad then at least make the dressing. Having a healthy, good for you, sugar-free dressing in the fridge can be a meal lifesaver.

Winter Citrus Salad
Ingredients
3-4 cups mixed greens
1 small head radicchio, torn
1 each blood orange, grapefruit, orange, tangerine or tangelo
1 avocado, thinly sliced
1/2 cup chopped herbs (cilantro, mint, dill, parsley, thyme etc.)
1/4 a thinly sliced red onion
1/2 a thinly sliced jalapeno
1/4 cup chopped pistachios
Instructions
Place everything into a large salad bowl. Drizzle with the dressing and toss gently.
Citrus Tahini Dressing
Ingredients
1/2 cup tahini
2 tsp orange zest
1/4 cup fresh orange juice
1/4 cup fresh lemon juice
2 TB rice vinegar
2 tsp honey (or agave)
4 cloves minced garlic
2 tsp fresh thyme, minced
1 tsp salt
lots of fresh ground black pepper
Instructions
Place all ingredients into a lidded jar and shake until combined. Alternately, place into a bowl and whisk until combined.
