Asian Pear & Radicchio Crostini

This is a very simple appetizer to put together, and it lasts well at room temperature. Both of which make this the perfect small bite for a New Year's Eve party. Because if you're anything like me, you don't want to be fussing over keeping hot foods hot or cold foods cold all night long. Goat cheese is my absolute favorite, and it naturally pairs with honey. The radicchio adds color and an interesting bite (I won't call it bitter), while the Asian pear brings everything together with a sturdy crisp crunch. Sophisticated, complex, and simple all in one tasty app!


Radicchio & Pear Crostini
Ingredients
1 small head of radicchio, cut into 1" pieces
1 Asian pear
goat cheese
2 TB honey
2 TB balsamic vinegar
a couple sprigs of fresh thyme (plus more to decorate)
1 baguette, sliced and toasted
Instructions
Spread goat cheese onto each slice of toasted bread and then top with a slice of pear and a piece of radicchio.
In a small saucepan combine the honey, balsamic vinegar and thyme sprigs. Bring to a simmer over medium-low heat and cook for 3-4 minutes, stirring occasionally.
Drizzle the warm honey mixture over the crostini's and then sprinkle a few of the remaining thyme leaves on top.
