Chocolate Almond Butter No-Bake Cookies (vegan, GF)

Every Christmas season without fail my husband asks for no-bake cookies. And really, it's the only time I ever make them, which seems a little silly since they're so easy! This time around I wanted to make them so that my sister, who is vegan, and my son's friend, who has a peanut allergy, could eat them too. Simple, simple modifications and they're friendly to almost any diet (except the sugar-free kind)! There may be a faint hint of coconut from the oil, but to the average cookie eater they taste just like the original! So quick and easy, and I bet all the ingredients are in your pantry. No-bake away!

Chocolate Almond Butter No-Bake Cookies (vegan, GF)

Ingredients

  • 1 1/2 cups sugar

  • 1/2 cup coconut oil

  • 1/2 cup unsweetened plain almond milk (or other non-dairy milk)

  • 1/4 cup cocoa powder

  • 3 cups old-fashioned oats

  • 1 cup almond butter

  • 1 tsp vanilla

  • pinch of salt

Instructions

In a medium, heavy bottomed saucepan bring sugar, coconut oil, milk, and cocoa powder to a boil. Allow to boil for 1 minute, stirring frequently. Remove from heat and stir in vanilla, salt, and almond butter. Stir until well combined and then add oats. Stir until combined. Drop by tablespoonfuls onto parchment paper and allow to cool.
