Bacon, Egg & Arugula Breakfast Sandwich

I didn't intend to make this sandwich. It sort of just happened... all of the necessary components were at the ready, and there really was no choice but to pile them into the most amazing breakfast sandwich you'll ever eat.


This is my opinion but this sandwich is made up of some of my most favorite ingredients, so of course I think it's amazing (confident you'll agree).
Let me break it down for you: bacon, soft-cooked egg, goat cheese, arugula, just a smear of tomato jam, and a sprinkle of crunchy sprouts.
You see?


There's crispy, crunchy, tangy,
peppery, salty, and creamy. All together in an English muffin hug. It's a perfect balance of your breakfast favorites, no fork required.


Bacon, Egg & Arugula Breakfast Sandwich
(written to serve 4 but there aren't really any "true" ingredient quantities in a sandwich like this)
Ingredients
4 whole wheat English muffins
4-8 slices bacon
4 over easy eggs
goat cheese
tomato jam
arugula
sprouts
salt and pepper, to taste
Instructions
1. Toast the English muffins. Spread goat cheese on the bottom halves of the muffins and tomato jam on the tops. Place arugula, bacon, egg and sprouts onto the bottom muffin half, season with salt and pepper and top with the muffin top.
2. Sit down with a hot cup of coffee and enjoy.
