Everyday Pancakes

We all need a stash of tried and true, simple, well loved recipes. This pancake recipe is one to add to that stash. It took a little bit of experimenting to come up with a recipe my kids love as much as the pancake mix in the blue bag (sigh, frown).

Fortunately for you and I, this recipe is so quick and easy, you won't miss that powdered, mystery ingredient mix! The secret here is to use white-whole wheat flour, and finely grind the oats, so there aren't any "seeds, and nuts... gross!" (Someday my littles will come to like seeds, and nuts, yes?!)

I start by placing whole oats in my Vitamix (a food processor would work too), and grinding them into a coarse flour. Then I add the rest of the ingredients and give it a good whir, and done! Making the batter in the blender is super handy- the pouring spout makes perfectly round pancakes- and less dishes to wash. Score!

Everyday Pancakes

Ingredients:

  • 1/2 cup white whole wheat flour

  • 1/2 cup oat flour (grind regular oats in a food processor or high speed blender)

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 2 tablespoons sugar

  • 1 egg

  • 1 cup milk

  • 1 tablespoon melted butter or coconut oil

Instructions:

1. Grind oats in high speed blender. Add remaining ingredients and process until well mixed.

2. Pour batter onto a hot griddle or skillet. Cook until the top becomes bubbly. Flip and cook for about 1 minute longer.

3. Stack pancakes on you and your littles plate. Add toppings of choice and sit down for breakfast.
