Grapefruit & Kale Smoothie

The holidays are filled with my favorite things: family, festivities, and food. Too much food, perhaps (although it seems there's no such thing, when it's good food!). I can't wait to dig in to leftovers, and the fridge is full of them- but my body needed just a tiny pause from all the goodness today. A gentle cleanse... something light, tart, refreshing, and nourishing.

This green smoothie is all of those things, plus super simple to make. I love it because of the strong flavors from the grapefruit and ginger (plus they are super detoxifying!), but if you prefer milder flavors, back off just a smidge on those two ingredients, and use orange juice instead of water. A green smoothie or two later, and I can trade out my yoga pants for jeans again. Or not, because it's winter break, and there's really no need to be getting all dressed up. Ha!


Grapefruit & Kale Smoothie - serves 1
Ingredients:
1 1/2 cups tightly packed kale, stems removed
1 cup frozen pineapple
1/2 grapefruit, peeled, white pith removed
1 teaspoon fresh ginger, finely chopped
1 tablespoon raw honey or maple syrup
1/2 cup water
Instructions:
Place all ingredients in a high powered blender (I used my Vitamix), process on high until smooth.

244 calories, 1g fat, 60g carbohydrates, 8g fiber, 6g protein
