PB Caramel "Nice" Cream Bites aka PB Caramel Banana Bites

Peanut butter and ice cream are a mandatory combo in my family. Is it good for you? If you asked my late grandfather, he would adamantly say YES. We all know better - right? These PB Caramel "Nice" Cream Bites let you eat your ice cream and PB without feeling guilty. Frozen bananas make the perfect ice cream impersonator. Once blended with a little milk they become smooth and creamy just like ice cream (but with a banana flavor). Add peanut butter, salted peanuts and a sweet date caramel and we are almost at perfect. Dip that combo of frozen goodness in dark chocolate and...perfection!

PB Caramel "Nice" Cream Bites
Ingredients:
Caramel
1 cup dates
1/2 teaspoon salt
1/4 cup non-dairy milk
PB "Nice" Cream
3 frozen bananas
1 fresh banana
1/4 - 1/3 cup peanut butter
2 tablespoons - 1/4 cup non-dairy milk
Chocolate Coating
1 cup semi-sweet or dark chocolate
3 tablespoons flax oil (or other neutral oil)
Instructions:
Lightly grease an ice cube tray.
Place dates, salt and 1/4 cup of non-dairy milk in a food processor or high speed blender. Blend until smooth.
Place bananas, peanut butter and 2 tablespoons non-dairy milk into a food processor or high speed blender and blend until smooth and creamy. Add additional milk as needed.
Spoon 1 teaspoon date mixture into the bottom of each ice cube section. Top with banana puree. Place into the freezer and leave for 2-3 hours or frozen.
Heat chocolate and flax oil over a double boiler. Stirring until melted.
Remove "nice" cream bites from your ice cube tray and quickly dip into the chocolate. Set onto a parchment lined tray and place back into the freezer until firm.
*Substitute semi-sweet chocolate if you aren't a dark chocolate fan. If you have extra "nice" cream and caramel, stir it together and eat it with a spoon. I sure did.
