Peppermint Patties

I can remember as a kid spending the days before Christmas helping (watching) my mom make all sorts of Christmas candy and cookies. Chocolate covered cherries, peanut butter cups, fudge, gingerbread men, sugar cookies, almond roca, aplets & cotlets (a Pacific Northwest treasure), and peppermint patties.

The piles of Christmas goodies would then be given to friends, family, teachers, pastors and neighbors. That tradition was something I carried with me and every year before Christmas my dining room table would be covered in plates full of Christmas goodies....all waiting to be delivered.

This year, piles of candy and cookies weren't made but in their place, I get the joy of planning and preparing Christmas dinner with my family and Christmas shopping with my niece and nephew.
Peppermint patties are my all time favorite Christmas treat and it wouldn't be Christmas without at least one candy. Based on the track marks through the drying chocolate, and the mysteriously dissappearing patties, I'm pretty sure my niece was happy with these peppermint patties.

Have no fear...you've got time to make up a batch or three of these patties (one for you, one for your family and one tucked away in the freezer for a rainy day).
I'd suggest using the scraps from the big patties to make some mini peppermint patties- a la Junior Mints- (perfect for tucking in your purse before heading to the movies).


Dark Chocolate Peppermint Patties
Ingredients:
2 tablespoons coconut oil
2 tablespoons brown rice syrup
2 1/2 cups powdered sugar
1/2 teaspoon peppermint extract
2 tablespoons hot water
10-12 ounces dark chocolate chips
Crushed candy canes or peppermint candies
Instructions:
1. Combine first 3 ingredients in stand mixer or mixing bowl and mix until combinded. Add the peppermint extract and water. Mix to combine. Shape mixture into a ball and place in the freezer for 20-30 minutes.
2. Remove the peppermint "dough" from the freezer, place between two sheets of parchment or wax papper and roll until about 1/4" thick.
3. Cut circles out with a small round cookie cutter. Gather the remnants and repeat. Place patties into the freezer for 1+ hours.
4. Once peppermint patties are sufficiently frozen, melt chocolate over a double boiler or in your microwave.
5. Dip peppermint patties into the melted chocolate, place onto parchment or wax papper and sprinkle with crushed peppermint candies.
