Roasted Beet Hummus
Roasted Beet Hummus
Ingredients:
3 medium beets, roasted (app. 8 ounces)
4 teaspoons tahini
¾ teaspoon garlic powder
4 teaspoons lemon juice
¼ teaspoon ground cumin
½ teaspoon salt
Fresh ground black pepper, to taste
2 teaspoons olive oil
¼ cup + 2 tablespoons water
Instructions:
1. Combine beets through black pepper in the bowl of a food processor or high speed blender. Process until mixture is well combinded. With processor running, slowly add the olive oil through the feed shoot. Watch the consistency of the hummus at this point and add enough water to make the hummus smooth and creamy.
