Sesame Ginger Salad

When I retire, I'm going to spend hours (days?) in the kitchen concocting and creating all the things I only dream of having time to cook now. Healthy food, all lovingly handcrafted (ha!) with ingredients grown right in my backyard. Vegetables at every meal, and nothing from a box. My skin will glow with the radiance that only comes from a life lived akin to Little House on the Prairie meets Martha Stewart.
Right?
Someday?

There are a couple obvious flaws in this plan....
1. By the time I retire, I'll be too old & decrepit to care about cooking
2. All of the mouths I love to feed will be raised and gone
3. I need a dream that can become my reality, NOW!
And what is my reality now? Laundry, 12 hour shifts at the hospital, baseball games, rock climbing class, youth group, emergency grocery trips for class parties, homework, more laundry, field trips to chaperone, chickens, goats, dogs, cats, rabbits needing fed.
And oh, the kids are hungry too.

That frozen box of orange chicken sounds very enticing all of a sudden. Add some broccoli and sit back with a smile, proud to have put dinner on the table instead of going through the drive-thru. Little victories.
I'm not too proud for shortcuts, and you shouldn't be either. Which is why, when we found the tofu featured in this salad, we jumped for joy! (or at least smiled a lot).

Sesame Ginger Salad
Ingredients:
1 head of red leaf lettuce, chopped (about 5 cups)
1 avocado, sliced
1 orange, sliced
1 medium carrot, grated
1 green onion, thinly sliced
1/4 cup cashews, toasted
1 package of Sesame Ginger Tofu, cubed
Instructions:
1. Place all the vegetables and tofu into a large salad bowl. Drizzle with dressing and toss to combine.
Orange Ginger Vinaigrette
Ingredients:
1/4 cup orange juice
3 tablespoons extra-virgin olive oil
2 teaspoons rice vinegar
1/2 a lime, juiced
1 teaspoon sesame oil
1/2 teaspoon garlic
1/2 teaspoon ginger
1/2 teaspoon salt
Instructions:
1. Place all dressing ingredients in a screw top jar or small bowl. Shake or whisk to combine.
