This breakfast is the perfect break from eggs when you are eating paleo or in the middle of a Whole 30, both of which omit grains, sugars, and dairy. Eggs are great, and filling, and versatile... but seriously cannot be eaten every day. I like this breakfast because it can be made ahead, can be eaten warm or cold, and has a lot going on with flavor and texture.

I cook my sweet potato until fork tender but not mushy, then keep the apples raw for a tart crunch. Raisins add sweetness and the coconut flakes are just fun! A drizzle of almond milk brings it all together and makes it really seem like a cereal!

Sweet Potato & Apple "Cereal"

Ingredients

  • 1 medium sweet potato

  • 1 tart apple such as Pink Lady or Honeycrisp

  • 1/4 cup unsweetened raisins

  • 1/4 cup unsweetened flaked coconut

  • 1/4 cup chopped nuts, such as pecans

  • 1 cup plain, unsweetened almond milk

  • Cinnamon, to taste

Ingredients

  1. Bake or microwave sweet potato until just fork tender. Allow to cool and then cube. I leave the peels on because they're good for you.

  2. Dice the apple.

  3. Divide sweet potato, apple, and remaining ingredients between two bowls. Sprinkle with cinnamon and enjoy!
